  • 2 cups Whole Wheat Flour
  • 1 teaspoon Baking Powder

  • 2 teaspoons Ground Ginger

  • 1/4 teaspoon Ground Nutmeg
  • 1/4 teaspoon Ground Cloves
  • 1 tablespoon Coconut Oil
  • 2 egg whites Egg Whites
  • 1 teaspoon Vanilla Extract
  • 3/4 cup Greek Yogurt
  • 1/4 cup Molasses
  • 1/4 cup Pure Maple Syrup
  • 1/4 cup Coconut Milk

Method
 

  1. Preheat your oven to 350 degrees Fahrenheit. Spray a loaf pan with nonstick spray and set aside.
  2. In a medium mixing bowl, combine whole wheat flour, baking powder, baking soda, ground ginger, ground cinnamon, ground nutmeg, and ground cloves. Whisk until well blended and set aside.
  3. In a large mixing bowl, combine coconut oil, egg whites, Greek yogurt, molasses, pure maple syrup, and coconut milk. Blend until smooth.
  4. Gradually add the flour mixture to the wet ingredients. Stir gently until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 35 to 40 minutes, checking for doneness with a toothpick.
  7. Once baked, remove from the oven and cool in the pan for 10 minutes.
  8. Turn the cake out onto a wire rack to cool completely.
  9. If desired, drizzle with honey or glaze before serving.
