- Preheat your oven to 350 degrees Fahrenheit. Spray a loaf pan with nonstick spray and set aside.
- In a medium mixing bowl, combine whole wheat flour, baking powder, baking soda, ground ginger, ground cinnamon, ground nutmeg, and ground cloves. Whisk until well blended and set aside.
- In a large mixing bowl, combine coconut oil, egg whites, Greek yogurt, molasses, pure maple syrup, and coconut milk. Blend until smooth.
- Gradually add the flour mixture to the wet ingredients. Stir gently until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 35 to 40 minutes, checking for doneness with a toothpick.
- Once baked, remove from the oven and cool in the pan for 10 minutes.
- Turn the cake out onto a wire rack to cool completely.
- If desired, drizzle with honey or glaze before serving.
