Grapefruit Brûlée Breakfast Bowl

Ingredients
  

  • 1 grapefruit
  • to taste brown sugar
  • 1/2 cup Greek yogurt I used plain 2%
  • 1/2 cup muesli or granola
  • to taste honey
  • 1 tablespoon mint chopped (optional)

Equipment

  • Chef's Knife
  • Oven
  • Peeler

Method
 

  1. Turn the oven broiler on high.
  2. Peel the grapefruit and cut it into 1/2 inch slices. Cut off the bitter pith around the edge of each slice.
  3. If you don't want to have to use a knife to eat them, cut the pieces into quarters from there.
  4. Arrange slices on a foil-lined baking sheet.
  5. Dab the top of each piece with a piece of paper towel to dry it off.
  6. Spread a thin layer of brown sugar on each piece.
  7. Broil for around 8 minutes or until the sugar is bubbling but not burned.
  8. Meanwhile, add Greek yogurt and muesli to a bowl.
  9. Once the grapefruit is done, add it to the bowl.
  10. Add a bit of chopped fresh mint if desired.
  11. Drizzle the whole thing with honey and eat immediately.

Notes

  • Tip 1: You can also brûlée whole grapefruit halves if you prefer. The process is pretty much the same - you'd spread about a tablespoon of brown sugar on the top of each half.
  • Tip 2: To make the halves more stable, cut a little off the bottom so you have a flat base.
  • Tip 3: If you have a kitchen torch, you can use it to brûlée the grapefruit halves rather than broiling them for a deeper amber color.
  • Tip 4: You can add the melted sugar left on the bottom of the baking sheet if you have enough left over.
  • Tip 5: I personally prefer honey, but either is fine!
