Ingredients
  

  • 2 pounds chicken breast about 4-6 chicken breasts depending on size
  • 3/4 cup olive oil
  • 1 tablespoon Greek seasoning Greek Freak is my favorite Greek seasoning
  • 1/2 teaspoon garlic powder
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 5.3 ounces Greek yogurt plain unsweetened, or about 2/3 cup
  • 1 teaspoon lemon juice
  • 1 teaspoon Greek seasoning
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon salt or just a small pinch
  • 8 medium pita breads
  • 1 medium cucumber diced, at least thinly sliced and quartered, but large cucumbers the slices may need to be cut into 6 pieces.
  • 1 pint cherry tomatoes diced
  • 1/2 medium red onion diced
  • 6-8 cups lettuce shredded

Method
 

  1. Start by slicing each chicken breast horizontally into two thin, even slices. This helps the chicken cook faster and evenly. Place the chicken slices into a large gallon size zip-top bag.
  2. Next, add the olive oil, 1 tablespoon Greek seasoning, ½ teaspoon garlic powder, lemon juice, salt, and pepper to the zip-top bag. Close the bag tightly and shake it well to ensure the chicken is completely coated in the marinade. Let it rest in the refrigerator for at least thirty minutes, allowing the flavors to meld.
  3. Once the chicken has marinated, remove it from the bag. Lightly oil your grill or grill pan, turning the heat to medium-high. Grill the chicken for about four to five minutes on each side, or until it reaches an internal temperature of 165 degrees when measured with a meat thermometer. This will give it a beautiful char and keep it juicy.
  4. After grilling, let the chicken rest on a cutting board for at least five minutes. This is crucial as it allows the juices to redistribute, preventing a dry wrap. Once rested, slice the chicken into bite-sized pieces.
  5. In a small bowl, pour the Greek yogurt. Add 1 teaspoon lemon juice, 1 teaspoon Greek seasoning, ½ teaspoon garlic powder, and ¼ teaspoon salt to it. Mix everything well until combined. This will serve as a creamy, tangy sauce for your wraps.
  6. Warm the pita breads in the microwave for about twenty to thirty seconds or in a toaster oven for around thirty seconds until they’re just warm. This makes them more pliable and easier to roll.
  7. Now, it’s time to assemble the wraps. Take each pita and add a generous portion of the grilled chicken, followed by shredded lettuce, diced cucumber, diced tomato, and a drizzle of the yogurt sauce. You can also add the red onion for an extra bite.
  8. If you’re serving a group, consider placing all the ingredients on a table and letting everyone build their own wraps. This interactive style is fun and allows everyone to tailor their meal to their liking.
  9. Once assembled, roll each wrap tightly. I find it helpful to use a piece of parchment paper or foil to hold everything together while you eat. If you skip this, they can get messy and hard to hold.
