- First, take your gallon-sized Ziploc bag and add the chicken thighs, soy sauce, honey, chicken broth, grated ginger, sesame oil, garlic powder, and onion powder. Seal the bag tightly and give it a good shake. You want to ensure that each piece of chicken is well-coated in the marinade.
- Once coated, place the bag in the refrigerator. Let the chicken marinate for at least one hour, but for best results, I recommend leaving it for two hours or even overnight. This allows the flavors to penetrate the meat thoroughly.
- Preheat your oven to 400°F (200°C). This initial temperature will help to seal in the juices of the chicken during the first stages of cooking.
- While the oven is heating, prepare a 9 x 13 casserole dish by spraying it with nonstick spray. This will help the chicken not to stick and make cleanup easier.
- Next, remove the chicken from the marinade and arrange the thighs skin-side down in the casserole dish. This will help the skin become crispy as it cooks.
- Transfer the dish to the oven and bake the chicken for 25 minutes. During this time, the marinade will start to caramelize, giving your chicken a beautiful golden color.
- After 25 minutes, carefully flip the chicken thighs over and increase the oven temperature to 425°F. This higher heat will help achieve that perfect crispy skin.
- Continue baking for another 25 minutes. You can start to check the internal temperature to ensure it reaches 165°F (74°C) for safe consumption.
- If you desire more browning, consider placing the chicken under the broiler for a couple of minutes. Keep a close eye to avoid burning!
- Once done, remove your Honey Soy Chicken Thighs from the oven and let them rest for a few minutes. This will help the juices redistribute and keep the chicken moist. If desired, sprinkle some sesame seeds and sliced green onions over the top for an elegant finish.
Notes
For best results, aim to marinate your chicken thighs for at least an hour, but overnight is even better!
