Ingredients
  

  • 1 cup fine bulgur
  • 1.5 cup hot water
  • 1 small tomato
  • 3 leaves lettuce
  • 4 sprigs parsley
  • 2 sprigs spring onion
  • ½ small onion
  • ½ cup olive oil
  • 1 tbsp tomato paste
  • 1 tsp red pepper flakes
  • ¼ tsp cumin
  • 2 tbsp pomegranate molasses
  • juice of ½ lemon
  • salt to taste
  • pepper to taste

Method
 

  1. Put the fine bulgur into a deep and wide bowl, pour hot water over it, and mix. Cover and set aside until the bulgur absorbs the water.
  2. Finely dice the tomato and onion. Set aside.
  3. Finely chop the parsley and spring onions, and coarsely chop the lettuce. Set aside.
  4. Heat the olive oil in a skillet, add the diced onion and sauté until translucent.
  5. Add the tomato paste, red pepper flakes, and cumin to the sautéed onion, and continue sautéing for a few more minutes. Set it aside and let it cool.
  6. Add the finely chopped parsley, spring onions, onion, and tomato paste mixture to the bulgur, which will now have absorbed the water and be swollen.
  7. Then pour the pomegranate molasses and lemon juice into the bowl and season with salt and pepper. Mix for about 5-6 minutes until the flavor of all the ingredients is taken up by the bulgur.
  8. Finally, add the tomatoes and lettuce, mix, and serve cold.

Notes

  • Storage: Store leftover Kisir in an airtight container in the refrigerator for up to three days.
  • Freezing: It’s better not to freeze Kisir since the texture of the bulgur can change.
  • Pairing: Kisir pairs wonderfully with grilled meats or can be enjoyed as a light lunch on its own.
  • Variations: Feel free to add other fresh vegetables like bell peppers or cucumbers for extra crunch.
