  • 30 ounces chickpeas rinsed and drained (or 3 cups cooked chickpeas)
  • 1 medium red bell pepper chopped
  • 1.5 cups fresh flat-leaf parsley chopped (about 1 bunch)
  • 0.5 cup red onion chopped
  • 0.5 cup celery chopped plus leaves (about 2 ribs)
  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons lemon juice from 1 to 1 ½ lemons
  • 2 cloves garlic pressed or minced
  • 0.5 teaspoon kosher salt
  • 0.5 teaspoon freshly ground black pepper

Method
 

  1. In a large bowl, add the chickpeas, bell pepper, parsley, red onion, and celery. Mix them gently to combine. The colors should be striking and inviting.
