Ingredients

  • 1 lb. cod fillets rinsed and pat dry
  • 1/4 teaspoon salt
  • 1 tablespoon lemon juice freshly squeezed
  • 3 dashes cayenne pepper
  • 1.5 tablespoons olive oil or extra virgin olive oil
  • 1 tablespoon chopped parsley

Equipment

  • Chef's Knife
  • Oven
  • Baking Sheet

Method

  1. Preheat your oven to 400°F (205°C). This step is crucial for ensuring that the cod cooks evenly.
  2. Prepare a baking tray by lining it with parchment paper or lightly greasing it. This makes for easy cleanup.
  3. Arrange the cod fillets in the baking tray, making sure they are spaced apart.
  4. Drizzle the olive oil over the fish, ensuring each fillet is well-coated.
  5. Squeeze the lemon juice over the cod, allowing it to infuse the fish with brightness.
  6. Sprinkle the salt and cayenne pepper over the fillets.
  7. Place the baking tray in the preheated oven and bake for about 10 to 12 minutes.
  8. The cod is ready when it flakes easily with a fork and is opaque in color.
  9. Once cooked, remove the tray from the oven and let the cod rest for a minute.
  10. Garnish with freshly chopped parsley before serving.

Notes

  • If using frozen fish fillets: Thaw them completely before baking.
  • Pat dry: Use a paper towel to remove excess moisture.
  • Glass baking tray: It retains heat better and helps food cook evenly.
  • Cover with foil: This can help prevent drying out during baking.
  • Extra virgin olive oil: Rub both sides of the cod fillets with it for more flavor.
  • Mediterranean flavor: You can add minced garlic or olives for variation.
