Method
 

  1. Start by making the crust. In a food processor, combine flour, butter, salt, sugar, and orange zest. Pulse it a few times until the butter is the size of small peas. This texture is key to a flaky crust—don't overmix!
  2. Next, add ice cold water, starting with ¼ cup. Pulse on and off until the mixture is just combined. If the dough seems crumbly, add more water, one tablespoon at a time, until it holds together when pressed.
  3. Transfer the mixture to a floured surface. Knead it gently a few times to incorporate everything. Form it into a ball, then divide it into two discs. Wrap each disc in plastic wrap and refrigerate for one hour, or until you're ready to use them.
  4. Once the dough is chilled, take it out and roll each piece on a lightly floured surface into a circle about twelve inches in diameter. Place one circle into a deep dish pie pan, allowing the excess to hang over the edges.
  5. For the filling, peel and pit the peaches, then slice them about half an inch thick. In a large bowl, mix the peaches with brown sugar, flour, cinnamon, nutmeg, salt, orange zest, and orange juice. The mixture should be fragrant and inviting!
  6. Pour the peach mixture into the prepared pie crust, piling the peaches high in the center for that delicious, homemade look.
  7. Next, place the second rolled-out crust on top of the filling. Fold the edges of the top crust under the edge of the bottom crust, crimping them together to seal in the filling.
