- Start by preheating your oven to 350 degrees Fahrenheit. This is an important step to ensure even baking. A hot oven will help your cookies rise perfectly!
- Next, prepare your baking sheet. You can either grease it lightly or line it with parchment paper or a silpat. This helps prevent the cookies from sticking and makes cleanup much easier.
- In a large mixing bowl (or the bowl of a stand mixer), combine the old fashioned oats, flour, sugar, brown sugar, baking soda, and salt. Mix these dry ingredients together until well combined. This ensures that the baking soda and salt are evenly distributed throughout the dough.
- Add the canola oil, eggs, and vanilla to the dry mixture. Using a wooden spoon or your mixer, mix the ingredients until they are just combined. Don't worry if the dough looks a bit crumbly; that's just fine.
- Now it’s time to fold in the semi-sweet chocolate chips. Use a spatula to gently incorporate them into the dough, making sure they are evenly distributed.
- Using your hands, clump together about a tablespoon of dough. It might seem crumbly, but that’s normal. Place the clumps onto the prepared baking sheet, leaving enough space between them to allow for spreading. Repeat this process with the remaining dough.
- Pop the baking sheet into the preheated oven and bake for 10 to 12 minutes. Keep an eye on them – you want them to be golden and set but still slightly soft in the center. Overbaking can lead to dry cookies.
- Once baked, remove the cookies from the oven and let them cool on the baking sheet for about five minutes. This will allow them to firm up a bit before transferring them to a wire rack to cool completely.
