Ingredients
  

  • 2 Tbsp Ground flax seed
  • 6 Tbsp Water
  • 1/2 cup Avocado oil
  • 3/4 cup Pure maple syrup
  • 1 tsp Pure vanilla extract
  • 1 tsp Pure almond extract optional
  • 5 cups Super fine almond flour
  • 2 large Navel oranges, zested
  • 2 tsp Baking powder
  • 1/4 tsp Baking soda
  • 1/2 tsp Sea salt
  • 1 cup Dried cranberries
  • 1/3 cup Coconut butter, melted

Method
 

  1. Preheat your oven to 375 degrees F (190 degrees C) and line a large baking sheet with parchment paper.
  2. In a mixing bowl, stir together the ground flax seed and water. Allow this mixture to sit for about 10 minutes until it thickens up.
  3. Once the flax eggs are ready, whisk in the avocado oil, pure maple syrup, vanilla extract, and almond extract until everything is well combined.
  4. Add the remaining dry ingredients, including the almond flour, baking powder, baking soda, sea salt, and the zest of the oranges. Mix well until a sticky dough forms.
  5. If you own a scone pan, fill the holes about two-thirds full with the scone dough. If you don’t have a scone pan, drop the dough onto the prepared baking sheet, shaping them into your desired size.
  6. Bake the scones on the center rack of your preheated oven for 15 to 22 minutes, until the edges are golden-brown.
  7. Once baked, allow the scones to cool on the baking sheet for at least 10 minutes.
  8. While the scones are cooling, melt the coconut butter in the microwave for about 20 to 30 seconds. Drizzle it over the scones for an extra layer of flavor.

Notes

  • Tip 1: You may also use algae oil, coconut oil, or full-fat canned coconut milk.
  • Tip 2: This should work out to 2 to 3 tablespoons of orange zest; don't skimp as it adds a ton of flavor!
  • Tip 3: I use juice-sweetened dried cranberries instead of sugar-sweetened ones.
  • Tip 4: To make scones sugar-free, increase the avocado oil to 3/4 cup and replace maple syrup with a sugar-free sweetener.
