Ingredients
  

  • 2 cups boneless and skinless chicken breasts cooked and shredded
  • 1/4 cup Greek yogurt plain, fat-free
  • 2 teaspoons lime juice
  • 2 tablespoons basil pesto
  • 1/2 cup roasted red bell peppers diced
  • 2 cups baby spinach

Method
 

  1. In a mixing bowl, combine the shredded chicken, Greek yogurt, lime juice, and pesto. Mix well to combine.
  2. Add the roasted red bell peppers and gently stir just until combined.
  3. Slice each hoagie roll lengthwise without cutting all the way through.
  4. Place a handful of baby spinach inside each hoagie roll.
  5. Stuff each roll with the chicken salad mixture.
  6. Press down gently on the sandwiches and cut them in half if desired.
  7. Serve immediately and enjoy!
