Ingredients
  

  • 1 cup raw almonds
  • 1 cup raw cashews
  • 8-9 pieces medjool dates pitted
  • 1 tsp vanilla extract
  • 2 Tbsp pumpkin puree
  • 1 tsp cinnamon
  • 1/2 tsp pumpkin pie spice
  • 1 dash sea salt

  • Mixing Bowl

Method
 

  1. Combine cashews and almonds in a food processor and process until a fine, grainy consistency.
  2. Add all other ingredients, and process until a dough begins to form. If the mixture seems too dry, add in a teaspoon or two of water or more pumpkin puree.
  3. Roll into bite-sized balls and chill for about 20 to 30 minutes to set.
  4. Enjoy!

Notes

  • If these seem dry at all, add a bit more pumpkin puree!
