Ingredients
  

  • 2 fillets Salmon
  • ½ teaspoon Salt
  • ¼ teaspoon Black Pepper
  • 4 slices Lemon
  • 1 teaspoon Minced Garlic divided
  • 1 tablespoon Unsalted Butter thinly sliced into four pieces
  • Parsley and Dill for garnish

Method
 

  1. Preheat your oven to 400 degrees F.
  2. Prepare sheets of aluminum foil, one for each piece of salmon.
  3. Arrange the salmon fillets on the foil.
  4. Season generously with salt and pepper.
  5. Place a couple of lemon slices on top of each piece of fish.
  6. Top each piece with a few pieces of butter.
  7. Bring the sides of the foil together to make packets.
  8. Cook the packets in the oven for 18 to 20 minutes.
  9. Once done, remove from the oven and baking sheet.
  10. Serve with your favorite side dishes.

Notes

Any veggies that cook fairly quickly will work here: broccoli, asparagus, thinly sliced potatoes, green beans, etc. If you don’t want them steamed in a packet, roast them on a baking sheet on the second rack in your oven. Store leftovers in the fridge, for up to 3 days.
