Method
- Preheat your oven to 400 degrees F.
- Prepare sheets of aluminum foil, one for each piece of salmon.
- Arrange the salmon fillets on the foil.
- Season generously with salt and pepper.
- Place a couple of lemon slices on top of each piece of fish.
- Top each piece with a few pieces of butter.
- Bring the sides of the foil together to make packets.
- Cook the packets in the oven for 18 to 20 minutes.
- Once done, remove from the oven and baking sheet.
- Serve with your favorite side dishes.
Notes
Any veggies that cook fairly quickly will work here: broccoli, asparagus, thinly sliced potatoes, green beans, etc. If you don’t want them steamed in a packet, roast them on a baking sheet on the second rack in your oven. Store leftovers in the fridge, for up to 3 days.
