  • 2 tablespoons Olive oil
  • 1 large shallot Shallot, minced
  • 1 pound Green beans or haricot verts, trimmed
  • 5 fuyu persimmons Persimmons, hulled, peeled (optional), and sliced
  • to taste Salt and pepper

Method
 

  1. Heat your olive oil in a large skillet over medium-high heat. You want the oil to shimmer but not smoke, which means it’s ready for the next step.
  2. Add the shallots to the skillet and sauté them for about 1 minute until fragrant. You should start to smell their sweet, delicate aroma filling your kitchen.
  3. Next, toss in the green beans and stir them to coat them in the oil. Cover the skillet and let them cook for about 3 to 5 minutes. You’re aiming for a vibrant green color, and they should still be slightly crunchy, known as al dente.
  4. Once the green beans are bright green, it’s time to add the persimmons. Gently stir them in and continue cooking for another 2 to 3 minutes until the green beans are tender and the persimmons have softened beautifully.
