  • 1 bunch about ½ lb Dandelion greens
  • 1 teaspoon Oil
  • 2 cloves Garlic
  • Kosher salt to taste
  • Freshly ground black pepper to taste
  • Crushed Red Pepper

Method
 

  1. Begin by trimming the bottom of the dandelion greens. Rinse them in cold water to remove any dirt or debris. It's essential to have clean greens for the best flavor.
  2. Next, chop the dandelion greens. Keep the more tender leaves whole, separating them from the tougher stems. The ratio of leaves to stems can vary based on the age of the plant; use about ¾ leaves to ¼ stems for older greens.
  3. Now, take your garlic cloves and mince them finely. This will ensure they infuse the oil nicely during cooking.
  4. Heat a generous amount of olive oil in a large pan over medium heat. You want the oil to shimmer, which should take about 2 to 3 minutes.
  5. Add the minced garlic to the pan. Sauté for 1 minute, or until the garlic is lightly golden and fragrant. Be careful not to let it burn!
  6. Once the garlic is ready, add the chopped dandelion greens into the pan. Increase the heat to high and sauté for a few minutes. You’re aiming for the greens to wilt but still retain their bright green color.
  7. Season the mixture with kosher salt and freshly ground black pepper to taste. If you like a little heat, sprinkle in some crushed red pepper as well.
  8. After a couple of minutes and once the greens are perfectly wilted, remove the pan from heat. The greens should be tender but still vibrant.
  9. Serve the Sautéed Italian Dandelion Greens immediately. They make a fantastic side dish or can be enjoyed on their own!
