Method
 

  1. Preheat your oven to 400°F. This is crucial for ensuring that the eggs set perfectly when you pour them over the mixture.
  2. In a medium-sized bowl, whisk together the eggs and 1 tablespoon of water until they are well combined. The addition of water makes the eggs fluffy. Stir in the cheddar cheese, baby spinach, salt, and black pepper. Set this mixture aside.
  3. Heat a 12-inch cast-iron skillet or another ovenproof skillet over medium heat. The right pan is important to ensure even cooking throughout.
  4. Spray the skillet lightly with oil, creating a non-stick surface. Then, add the smoked turkey sausage slices. Cook them until they are browned on both sides, approximately 5 to 6 minutes. You’ll notice the delightful aroma filling your kitchen as they cook.
  5. Add the mushrooms and scallions to the skillet. Continue cooking and stirring for about 5 minutes, until the mushrooms become tender. This step adds incredible texture and flavor!
  6. Remove the skillet from heat and pour the egg mixture evenly over the sausage and vegetables in the skillet. Make sure it's spread evenly to allow for consistent cooking.
