Ingredients
  

  • 2 1/4 cup All-purpose flour
  • 1/4 cup Sugar
  • 4 tsp Baking powder
  • 1/4 tsp Salt
  • 2 1/2 cup Buttermilk
  • 1/3 cup Vegetable oil
  • 1 count Egg beaten
  • 1 tsp Vanilla extract
  • 1/4 cup Christmas sprinkles plus more for topping
  • 1 cup Whipped cream
  • 1 cup Strawberries with tops cut off

Method
 

  1. In a medium mixing bowl, combine the dry ingredients: 2 1/4 cups of all-purpose flour, 1/4 cup of sugar, 4 tsp of baking powder, and 1/4 tsp of salt. Use a whisk to mix them thoroughly until well combined, ensuring there are no lumps in the mixture.
  2. Next, add the wet ingredients. Pour in 2 1/2 cups of buttermilk, 1/3 cup of vegetable oil, and 1 beaten egg. Don’t forget to include 1 tsp of vanilla extract. Whisk everything together until the batter is smooth and free of lumps.
  3. Now it’s time to fold in the fun! Gently add 1/4 cup of Christmas sprinkles to the batter and use a spatula to fold them in without overmixing.
  4. Preheat a griddle or frying pan over medium heat. Lightly grease it with a bit of oil or butter to prevent sticking.
  5. Pour about 1/4 cup of the pancake batter onto the hot griddle for each pancake. You can make them larger or smaller based on your preferences.
  6. As the pancakes cook, watch for bubbles to form on the surface. This usually takes about 2 to 3 minutes. Once you notice bubbles, it’s time to flip them carefully.
  7. Cook the other side for another 2 to 3 minutes until it achieves a golden brown color. Your pancakes should be fluffy and beautifully browned on both sides.
  8. Once cooked, remove the pancakes from the griddle and stack them on a plate. Repeat the process with the remaining batter until you’ve used it all.
  9. Now for the fun part! To build your snowman, place a larger pancake at the bottom, a slightly smaller one on top, and finish with the smallest pancake on top.
  10. Finally, garnish your snowman with whipped cream for the hat and place a cut strawberry on top to resemble a Santa hat. Add more sprinkles for decoration!
