Ingredients
  

  • 1 cup non-dairy milk
  • 1 cup strawberries stems removed
  • 1 ripe banana preferably frozen
  • 1 tablespoon goji berries soaked in water until plump
  • 1 tablespoon almond butter
  • 1 scoop vanilla protein powder (optional)
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • 1 pitted Medjool date (optional)
  • 1 fresh lemon juice squeeze
  • 1 pinch sea salt

Method
 

  1. In an upright blender, combine the non-dairy milk, strawberries, banana, goji berries, almond butter, protein powder, ground cinnamon, ground ginger, pitted date, fresh lemon juice, and sea salt. Slowly bring the blender’s speed up to high. Blend until completely smooth. Enjoy the spiced strawberry and goji berry smoothie immediately!

Notes

  • Tahini and coconut butter: Both are delicious in place of the almond butter if you have a nut allergy (or you just want to change things up).
  • Soaking goji berries: I like to soak the goji berries ahead of time because you really do get a bit more flavor from the extra step. Plus, they tend to make the texture of the smoothie even creamier.
  • Storage: You can keep a jar of soaked goji berries, submerged in water, in your refrigerator for up to a week.
  • Protein powder: My favorite vegan protein powder right now is called Epic Protein by Sprout Living. I find it isn’t nearly as sweet as most of the other options on the market. It doesn’t have any weird gums, “natural flavors,” or additives. Plus, the texture blends up nice and smooth—not at all chalky.
