Ingredients

  • ½ cup butter softened
  • 8 ounces cream cheese softened
  • 1 egg
  • 1 box strawberry cake mix
  • ½ cup powdered sugar

Equipment

  • Oven
  • Baking Sheet
  • Mixing Bowl

Method

  1. Preheat your oven to 350°F.
  2. In a large mixing bowl, combine the softened butter, egg, and cream cheese. Using a hand mixer, beat the mixture until it's fluffy and smooth.
  3. Next, add in the strawberry cake mix and beat until the mixture is smooth.
  4. Once combined, cover the bowl with plastic wrap and chill the dough in the refrigerator for about 30 minutes.
  5. After chilling, prepare a small bowl with the powdered sugar. Using a medium cookie scoop, scoop out the chilled dough and roll it into balls.
  6. Place the sugar-coated dough balls on a greased cookie sheet, ensuring they are spaced out to allow for spreading.
  7. Bake the cookies in the preheated oven for about 12 to 13 minutes.
  8. Once baked, remove the cookie sheet from the oven and let the cookies cool for a few minutes before transferring them to a wire rack.
  9. Enjoy your warm, freshly baked Strawberry Cake Mix Cookies!
