  • ½ large watermelon rind removed and cubed
  • cups cucumber chopped
  • 1 cup feta cheese crumbled
  • 2 tbsp olive oil
  • 1 lemon lemon juice of 1 lemon
  • ½ cup mint leaves chopped
  • 1 tbsp fresh basil chopped

Method
 

  1. Cut watermelon into cubes. Chop cucumbers down and crumble salty feta cheese. In a separate bowl, combine extra virgin olive oil, lemon zest, lemon juice, fresh mint, and basil leaves and whisk well. Alternatively, lime juice acts as a substitution for lemon in this recipe. Pour lemon dressing over fresh watermelon and feta and mix well to evenly coat. Optionally season with salt. Serve watermelon salad immediately!
