Ingredients
  

  • 2 medium sweet potatoes peeled and cut into fries
  • 2 teaspoons cornstarch
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon oregano
  • 1/2 teaspoon chipotle chili powder
  • 1 tablespoon coconut sugar or brown sugar
  • Sea salt to taste

Method
 

  1. First, take those peeled and cut sweet potatoes and place them in a large bowl filled with cold water. Let them soak for about an hour. This soaking step is crucial as it removes excess starch, which helps them crisp up beautifully when baked.
  2. Once they’ve soaked, drain the sweet potatoes and pat them dry with a kitchen towel. This step is essential; the drier they are, the crispier they’ll become. Transfer them to a large plastic sealable bag.
  3. Add the cornstarch to the bag and seal it tightly. Shake the bag until the sweet potatoes are lightly dusted with the cornstarch, ensuring there are no clumps. This will help achieve that perfect crispy texture.
  4. Next, transfer the sweet potatoes back to a large bowl. Drizzle them with olive oil, and sprinkle in the garlic powder, onion powder, oregano, chipotle chili powder, and coconut sugar. Toss everything well, making sure each fry is coated evenly. The sweet and spicy aroma will start to fill your kitchen.
  5. Preheat your oven to 450 degrees F. Line two baking sheets with foil and spray them with non-stick cooking spray. This will prevent the fries from sticking.
  6. Spread the sweet potatoes in a single layer on both baking sheets. Make sure they’re not touching each other; this will ensure even cooking and prevents steaming.
  7. After 15 minutes, use a spatula to toss the fries around on the sheet, spreading them out into a single layer again. Bake for an additional 15 minutes until they turn golden brown. The smell will be irresistible!
