- First, take those peeled and cut sweet potatoes and place them in a large bowl filled with cold water. Let them soak for about an hour. This soaking step is crucial as it removes excess starch, which helps them crisp up beautifully when baked.
- Once they’ve soaked, drain the sweet potatoes and pat them dry with a kitchen towel. This step is essential; the drier they are, the crispier they’ll become. Transfer them to a large plastic sealable bag.
- Add the cornstarch to the bag and seal it tightly. Shake the bag until the sweet potatoes are lightly dusted with the cornstarch, ensuring there are no clumps. This will help achieve that perfect crispy texture.
- Next, transfer the sweet potatoes back to a large bowl. Drizzle them with olive oil, and sprinkle in the garlic powder, onion powder, oregano, chipotle chili powder, and coconut sugar.
