Ingredients
  

  • 1 cup cooked sweet potato mashed
  • 1/2 cup almond butter can sub for any nut or seed butter of choice
  • 3 tablespoons maple syrup
  • 1/4 cup cocoa powder
  • 1/2 cup chocolate chips Optional

Method
 

  1. First, preheat your oven to 180C/350F, and don’t forget to grease a loaf pan.
  2. In a high-speed blender, food processor, or mixing bowl, combine the mashed sweet potato, almond butter, maple syrup, and cocoa powder. Blend or mix until everything is smooth and well incorporated.
  3. If you're using chocolate chips, gently fold them into the batter.
  4. Now, if your batter seems too thick, add a little milk or water to thin it out.
  5. Transfer the batter into your greased loaf pan, spreading it out evenly.
  6. Place the pan in your preheated oven and bake for around 20 minutes.
  7. Once baked, remove the brownies from the oven and allow them to cool completely in the pan.
  8. If desired, add frosting once they’re cool.
  9. Finally, slice into your Sweet Potato Brownies and enjoy the rich, fudgy goodness!
