Method
 

  1. 1. Preheat your oven to 275 degrees. This low temperature will help the chips cook evenly and become wonderfully crispy. A well-preheated oven ensures that your sweet potatoes start their transformation properly.
  2. 2. While the oven heats up, take your sweet potato and scrub it thoroughly under running water. Remember, leaving the skin on adds nutrients and texture, so there’s no need to peel!
  3. 3. Next, remove any blemishes from the potato and pat it dry with a clean towel. This step is crucial as moisture will prevent the chips from becoming crispy.
  4. 4. Using a mandolin or a sharp knife, slice the sweet potato into thin rounds, about 1/16 to 1/8 inches thick. The thinner the slices, the crispier the chips will be, so take your time to achieve uniform thickness.
  5. 5. In a large mixing bowl, add your sliced sweet potatoes and drizzle in the olive oil. Toss gently to coat each slice evenly. You can also add the curry powder and salt at this point, ensuring every chip is well-seasoned.
  6. 6. Line a rimmed cookie sheet with non-stick foil. Spread the potato slices in a single layer, making sure not to overlap them. If you have a lot of slices, you may need to use more than one cookie sheet.
  7. 7. Place the cookie sheet in the preheated oven. If using multiple sheets, place them on the middle and bottom racks. After 40 minutes, switch their positions to ensure even cooking.
  8. 8. After 40 minutes, use tongs to turn the sweet potato slices over. Return them to the oven for another 40 minutes. Keep an eye on them; if the edges look crispy, you might want to start checking for doneness.
  9. 9. If the chips are not yet crispy, bake for an additional 2 to 3 minutes. You want them lightly browned around the edges. Be careful not to burn them!
  10. 10. Once they’re ready, remove the chips from the oven and sprinkle with your favorite spices, if desired. Let them cool at room temperature on the cookie sheet; they will continue to crisp as they cool.
