Ingredients
  

  • 2 pounds tater tots frozen
  • ½ pound ground beef
  • 2 tablespoons taco seasoning
  • ½ cup refried beans
  • ½ cup corn
  • ½ cup black beans
  • ½ cup salsa
  • ½ cup sharp cheddar cheese
  • ½ cup monterey jack cheese
  • Pico de gallo
  • Sour cream
  • Cilantro
  • Avocado
  • Jalapeño

Method
 

  1. Line a sheet pan with parchment paper and preheat the oven to 425 degrees Fahrenheit.
  2. Spread 2 pounds tater tots, frozen in an even layer on the pan.
  3. Bake the tater tots for 10 minutes.
  4. Toss the tater tots and continue baking for another 10 minutes.
  5. While the tater tots are in the oven, heat a skillet over medium-high heat, then add the ½ pound ground beef.
  6. Cook the meat until it is evenly browned.
  7. Drain the excess grease from the ground beef, then add in 2 tablespoons taco seasoning and stir to combine.
  8. Once the tater tots come out of the oven, set the oven to broil.
  9. Top the tater tots with the cooked beef, ½ cup refried beans, ½ cup corn, ½ cup black beans, ½ cup salsa, ½ cup sharp cheddar cheese and ½ cup monterey jack cheese.
  10. Put the topped tots back into the oven and broil about 5 minutes, until the cheese is melted and bubbly.
  11. Take the tater tot nachos out of the oven and top with desired toppings which could include, Pico de gallo, Sour cream, Cilantro, Avocado, or Jalapeño.
