Ingredients
  

  • 2 tablespoons Butter
  • 2 medium Tomatoes sliced
  • 1/2 onion Onion diced
  • 1 clove Garlic minced
  • 1/2 cup Grated Monterey Jack Cheese
  • 6 eggs Eggs
  • Salt and Pepper to taste
  • 3 tablespoons Cilantro optional

Method
 

  1. Preheat your oven to 350º F.
  2. Melt butter in a 12-inch skillet over medium heat.
  3. Swirl the melted butter around the skillet to coat the bottom and sides.
  4. Add the sliced tomatoes, onion, and garlic. Sauté for about 3 to 5 minutes until softened.
  5. Top with grated Monterey Jack cheese.
  6. Crack each egg and add them on top, distributing evenly.
  7. Bake in the preheated oven for 18 to 20 minutes.
  8. Remove from the oven and run a silicon spatula around the edge to release the baked eggs.
  9. Slide onto a serving platter and top with cilantro or parsley.
