Ingredients

  • 2 pounds lean ground turkey
  • 1/2 cup almond flour
  • 3 large eggs
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon smoked paprika
  • 2 teaspoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon coriander
  • 1 teaspoon onion powder
  • 2 teaspoons granulated garlic
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon cayenne pepper (optional)

Equipment

  • Oven
  • Baking Sheet
  • Mixing Bowl

Method

  1. Preheat your oven to 375 degrees Fahrenheit. This is the perfect temperature to get those meatballs nice and golden brown on the outside while remaining juicy on the inside.
  2. In a large mixing bowl, combine 2 pounds of lean ground turkey, 1/2 cup of almond flour, 3 large eggs, and 1/4 cup of plain Greek yogurt. Mix well with your hands or a spoon until everything is incorporated.
  3. Add your spices: 1 tablespoon of smoked paprika, 2 teaspoons of chili powder, 2 teaspoons of ground cumin, 1 teaspoon of coriander, 1 teaspoon of onion powder, and 2 teaspoons of granulated garlic. Don’t forget to sprinkle in 1 1/2 teaspoons of kosher salt, 1/2 teaspoon of ground black pepper, and if you like a kick, 1/4 teaspoon of cayenne pepper. Mix everything together until evenly distributed.
  4. With clean hands, start forming the mixture into meatballs, about 2 inches in diameter. This size helps them cook evenly and stay juicy.
  5. Place the formed meatballs on a rimmed baking sheet that you’ve lightly sprayed with cooking spray. Make sure to leave about 2 inches of space between each meatball to allow for even cooking.
  6. Once all the meatballs are on the baking sheet, pop them in the oven and bake for about 20 to 22 minutes. You’ll know they’re done when they’re cooked through and have a lovely golden color on the outside.
  7. Remove the meatballs from the oven and let them cool for a couple of minutes before serving. This allows the juices to redistribute, ensuring they’re juicy and flavorful.
  8. Serve your delicious Turkey Chorizo Meatballs with your favorite dipping sauce or on a bed of pasta with marinara. Enjoy the delightful flavors!

Notes

  • Tip 1: Keep any leftovers in an airtight container in the fridge, where they’ll stay fresh for up to five days.
  • Tip 2: You can freeze the uncooked meatballs for up to three months. Just thaw them in the fridge overnight before cooking.
  • Tip 3: These meatballs go great with spaghetti, zucchini noodles, or even in a hearty sub sandwich.
  • Tip 4: Consider adding fresh herbs like parsley or cilantro to enhance the flavor.
  • Tip 5: Don’t be afraid to adjust the spices to your liking; add more cayenne for heat or more paprika for smokiness.
